This is Reid’s favorite meal. We have had it literally every Tuesday for a number of years.
Ingredients
- Ground Turkey - 4 lbs
- Chilli Powder - 8 tablespoon
- Garlic - 1 head
- Salsa - 8 oz
- Olive Oil - 4 tablespoon
- Rice - 4 cup
- Colby Jack Cheese - 24 oz
- Can of refried beans (Annie's Vegetarian) - 2 cans
Step 1
Start the rice cooking according to the instructions. Our path currently is 4 cups rice/8 cups water and 20 minutes at 2 on the burner.
Step 2
Coat the bottom of a big pan with olive oil. I just splash a bunch in there.
Step 3
Turn the burner to high heat.
Step 4
Add meat, crushed garlic, chilli powder, salt, pepper, and half a container of salsa.
I don’t actually measure this stuff but shake it out based on feel. I generally use a head of garlic or I crush cloves until I’m bored.
Step 5
Use a spatula to chop and stir the meat as it cooks. You can turn it down to 8 or so depending on how much spatula work you’re doing.
Step 6
When you’re bored, shred a block or two of Colby Jack or Cheddar cheese
Step 7
Heat up refried beans in microwave . . . about 2 mins. Add water if needed.
If you feel fancy you can put the beans and water in a pot with some garlic and salt to make it a bit better.
Step 8
Rice and meat should finish at about the same time.
I put down tortilla chips, then a scoop or two of rice, followed by meat, beans, and then top it with cheese.
